Overview: Our selected Raw Lavender honey is a burst of sweetness with an intense floral aroma. This is a beautiful honey, masterly foraged from wild lavender that scatters areas of Southern Spain. It is a pure delight in a jar. Its silky texture caresses the taste buds and is just heaven. Never disappointing, this honey makes it presence known in any recipe. Slightly varying in taste, colour and texture from season to season, it is raw, natural and unpasteurised as nature intended.
Colour: Extra white to light Amber.
Aroma: A floral, little intense and persistent.
Taste: Dominantly sweet, sometimes with slight sour notes.
Harvest Season: Spring/Summer
Floral Source: Foraged from wild Spanish Lavender (Lavandula Stoechas).
Geography: Harvested from Andalusia in the South of Spain.

Lavender Honey Uses: Lovely mixed into a warm herbal tea, baking buns or just straight off the spoon!.

Please note: If the honey sets (crystalizes) please don’t panic as it has not gone off. It is a natural characteristic of Raw Honey. Simply place your jar of raw honey in a glass bowl, quarter fill a pan with boiling water then place the bowl into the pan. The steam should heat the bowl, which heats the jar with out over heating it. Keep the water boiling by turning up the heat on the hob. Your honey should be runny again in 10 minutes or so (depending on size).
