Thyme Honey-Glazed Salmon & Kale

Tender salmon with a glossy, savoury-sweet glaze made with Bee Mercy Thyme Honey, garlic, teriyaki and a squeeze of lemon. Serve it over warm stir-fried vegetables and kale, with rice or noodles on the side.

Ingredients

For the salmon and glaze

  • 2 boneless salmon fillets
  • 2 tablespoons Bee Mercy Raw Thyme Honey
  • 3 tablespoons teriyaki sauce
  • 2 tablespoons sweet chilli sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon crushed garlic
  • Juice of ½ lemon
  • A pinch of black pepper

To serve

  • 100g kale, with tough stalks removed
  • 200g stir-fry vegetables of your choice
  • Cooked rice or noodles, enough for two

Method

  1. Mix the Thyme Honey, teriyaki sauce, sweet chilli sauce, soy sauce, garlic, lemon juice and black pepper in a bowl. Set aside about one-third of this sauce in a separate clean bowl for serving.

  2. Place the salmon fillets in a shallow dish and coat them with the remaining sauce. Cover and marinate in the fridge for 30 minutes.

  3. Preheat the oven to 200°C / 180°C fan / Gas Mark 6. Lift the salmon from the marinade and place it on a lined baking tray. Discard the marinade that has touched the raw fish.

  4. Bake for approximately 12–18 minutes, depending on the thickness of the fillets, until the fish is opaque and separates easily with a fork.

  5. While the salmon cooks, stir-fry the vegetables according to their pack instructions. Add the kale towards the end and cook until softened. Prepare the rice or noodles.

  6. Gently warm the sauce you reserved before adding the raw fish. Serve the salmon over the vegetables and kale, with rice or noodles, and spoon the warm sauce over the top.
