Thyme Honey Bread Rolls

Freshly baked Thyme Honey bread rolls glazed with Bee Mercy Raw Thyme Honey

Soft, golden and gently sweet, these homemade bread rolls combine the comforting warmth of freshly baked bread with the rich, aromatic character of Bee Mercy Thyme Honey.

Serve them warm with butter, cheese or an extra drizzle of honey.

Ingredients

For the bread rolls

  • 450g strong white bread flour
  • 7g fast-action dried yeast
  • 240ml warm milk
  • 170g Bee Mercy Raw Thyme Honey
  • 1 large egg
  • 1 egg yolk
  • 60g unsalted butter, melted
  • 4 teaspoons golden caster sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

For the honey glaze

  • 1 egg yolk
  • 1 tablespoon Bee Mercy Raw Thyme Honey
  • A small pinch of sea salt, optional

Method

  1. Place the flour, yeast, sugar and salt in the bowl of a stand mixer and stir briefly to combine.

  2. Gently warm the milk, Thyme Honey and melted butter. The mixture should feel pleasantly warm rather than hot.

  3. Add the warm milk mixture, whole egg, egg yolk and vanilla extract to the dry ingredients.

  4. Mix on a low speed for approximately 30 seconds, then continue on a medium speed for 3–5 minutes, until the ingredients form a soft, cohesive dough. If it remains excessively sticky, add a little more flour, one tablespoon at a time.

  5. Transfer the dough to a lightly floured surface and shape it into a smooth ball.

  6. Place the dough in a lightly greased bowl, cover it with a clean tea towel or reusable cover, and leave it in a warm place for 60–90 minutes, or until doubled in size.

  7. Gently press the air from the dough and divide it into two equal portions. Shape each half into a ball, cover and leave to rest for approximately 10 minutes.

  8. Divide each half into nine equal pieces, giving you 18 pieces in total. Roll each piece into a smooth ball and place in lightly greased muffin tins or on lined baking trays.

  9. Cover and leave the rolls to rise for approximately 30 minutes, or until visibly puffed.

  10. Preheat the oven to 200°C / 180°C fan / Gas Mark 6.

  11. Mix the egg yolk with one tablespoon of Thyme Honey. Brush the glaze lightly over the risen rolls and add a small pinch of sea salt, if desired.

  12. Bake for 15–17 minutes, until the rolls are beautifully risen and golden brown.

  13. Transfer to a wire rack and allow them to cool slightly before serving.

Serve warm with salted butter, cheese, jam or an additional drizzle of Bee Mercy Thyme Honey.
