Why choose Thyme Honey?

Thyme Honey is one of the collection’s most aromatic floral honeys. It rewards customers who want something bold, distinctive and unmistakably different from mild blended honey.

At Bee Mercy, we believe honey should be explored like coffee, cheese or olive oil, each variety has its own origin, aroma and character. Thyme brings its own distinctive place to the collection.

From Sierra del Moncayo, Spain

The landscape around the thyme covered slopes of the Sierra del Moncayo provides the setting in which this distinctive honey is produced. Honey is a natural agricultural product, so its colour, aroma, flavour and texture may vary subtly between harvests.

How to enjoy it

  •      Served with strong cheese
  •      Spread over warm bread
  •      Used in marinades
  •      Drizzled over roasted vegetables
  •      Stirred into warm drinks
  •      Added to savoury baking

GOOD TO KNOW

Raw and naturally variable

Our Honey and Bee Pollen is raw and unpasteurised carefully handled to preserve its natural character and distinctive flavour.

Raw honey may naturally thicken or crystallise over time. This is completely normal and does not mean that the honey has spoiled. Its texture and rate of crystallisation may vary between harvests.

If you prefer a more liquid consistency, place the closed jar in warm water and allow it to soften gradually. Avoid boiling water or overheating the honey.

Quality and authenticity

We choose honeys that offer something genuinely distinctive, not simply another jar of sweetness. Each variety is selected for its origin, flavour and natural character, then laboratory tested for added reassurance. This careful approach allows you to explore the remarkable differences found naturally across our collection.

Storage

Store at room temperature in a dry place away from direct sunlight. Always close the lid securely after use.

Not suitable for children under 12 months.

Apples and the Perfect Honey

"Dipping apples in honey is a central tradition of Rosh Hashanah, the Jewish New Year, signaling the hope for a sweet, fruitful year ahead. Held in autumn, this custom involves dipping apple slices into honey and reciting a special blessing, representing a "sweet new year". Key Aspects of the Tradition: Symbolism: The sweet apple, often associated with the Divine in Jewish mysticism, represents the garden of Eden, while the honey represents sweetness and abundance. Significance: It is a symbolic prayer for a year filled with happiness and blessings, often echoing the description of Israel as a "land flowing with milk and honey". Ritual: After reciting the blessing and mentioning the desire for a sweet year, the apple is eaten. Origins: While not a biblical commandment, the custom dates back to at least the medieval period (11th–15th centuries) and has roots in Ashkenazi tradition. The custom serves as a spiritual reflection, encouraging a "sweet" and positive start to the upcoming year."
